Fun and Easy Chicken Burrito Recipe!



What You'll Need:
Tortilla Shells (whole wheat, white... any kind you like!)
Chicken Tenderloins (about 2-3 per person)
Cheese (again, any kind you like!)
White Rice
Beans (about one can per every two people...
as to type of beans, this really is an "any kind you like" recipe... we used Pinto Beans)
Salsa
FUN APRON to wear while cooking!  :-)



If your cheese comes in a block, go ahead and get that shredded first.  Stick it in a bowl on the counter so it isn't too cold (it will melt better this way!).


Cook your rice.  Amount really depends on how many people you want to feed.


Get your chicken cooking on a skillet.  You can season your chicken however you want; I used Mrs. Dash, Basil, Garlic Salt, and Season Salt.  You want your chicken to have a good kick, since that's where most of the flavor in your burrito is coming from!  This chicken is also good served with mashed potatos and veggies!!!  :-)


While your chicken and rice are cooking, get your beans going as well.  Don't drain the can, as it will help prevent the beans from burning on the bottom of the pot.



Once cooked, drain your beans and rinse well.


Cook chicken to a golden brown.  If needed, check the inside to be sure its fully cooked.


After chicken is done, shred it into small pieces.


Fluff your now-cooked rice!


Stack all of these yummy foods onto your tortilla and then drizzle salsa over the top!


If you haven't put so much goodness on your tortilla that its impossible to fold, then go ahead and wrap up your burrito and enjoy!!!

See?  Simple and fun!!!

Haha, did you find it hard adjusting to just cooking for two after a large family? I have five siblings and I know I would! I bet it makes kp (kitchen patrol) a bit easiers, though! ;) Love your blog!
